We love this new dish! We start with roasting fresh zucchini, eggplant, red onion, and tomatoes. Then, toss it with pasta and a homemade garlic browned butter balsamic sauce with a sprinkle of red pepper flakes, parmesan, and fresh basil.

Pairs beautifully with this week’s Simple Side Salad under our “Sides” menu! The Protein Shrimp or Chicken would also be excellent; they are under our “Staples” menu!

Ready to Bake; Vegetarian; Can be Gluten Free (GF pasta or Zoodles); Can be Dairy-Free/Alpha Gal Friendly (no butter or cheese- sub coconut milk).
