It is a labor of love for sure with the timing of everything. In batches, we roast and simmer together golden raisins, diced eggplant, plum tomatoes, bell peppers, onion, celery, white wine vinegar, brown sugar, capers, garlic, mixed chopped olives, pine nuts, and parsley from our garden. It’s delightful and full of flavor and textures!
