The perfect tomato soup to go with a grilled cheese sandwich! We start with sautéing diced onion with carrot and garlic in olive oil. Then, gradually add in butter, tomato sauce and crushed tomatoes, sun-dried tomatoes, basil, and Italian seasoning with bay leaf, basil pesto, chicken broth, and a touch of balsamic vinegar. We use an emulsion blender to give it all a smooth, creamy texture.
