We put a delicious spin on this classic Irish soup! We simmer diced potatoes and onion in butter, then add homemade chicken broth, a splash of milk, and fresh spinach. Finished with an immersion blender for a silky texture, and topped with homemade rosemary croutons (with rosemary from our garden!) Yum!
