We put a spin on this classic Irish soup! We simmer diced potatoes and onion in butter, then add in homemade chicken broth, a splash of milk, and fresh spinach. Finished with an immersion blender for a silky texture and finished with homemade croutons with rosemary from our garden. Yum!
