This casserole is filled with rich, bright, savory, and fresh flavors. We start with ground Mexican sausage with hints of cumin and smoked paprika. Then, we sauté onions, bell peppers, poblano, beans, and corn in garlic. It all comes layered with eggs from Mimi’s Farm Fresh Eggs, black beans, red and green salsa, corn tortillas, loads of cheese, and fresh toppings, including green onion, jalapeno, red onion, cilantro, and a sprinkle of Cotija cheese.
