This viral recipe reminded me of one of our favorite camping sides! We core 2 large Vidalia onions and stuff with butter and spices. Then, wrap in foil and roast until they are tender and full of jammy flavor with fresh thyme! They come cut in half with another basting of butter for you to finish in your oven!
