We love Matthew’s tuna salad but really wanted to try it with our freshly poached chicken! We mix together chicken, olive oil, Duke’s mayo, a touch of wasabi paste, lemon, white wine vinegar, Homemade Italian dressing, red onion, dill pickles, corn, peas, apples, and finish with jalapeno chips. Seriously, don’t knock it until you’ve tried it! It’s wild and delicious, just like Matthew.
