This soup is delightful with roasted red peppers, shredded gouda cheese, fresh basil from our garden, a squeeze of lemon juice, a sprinkle of smoked paprika, of course a little finely chopped Vidalia onion and garlic, sauteed in cold pressed olive oil, finished with a touch of cream for a lovely texture with a bright palate.
