This seasonal soup can be served cold or hot. We sauté onion, garlic, and fresh Zucchini with a dash of curry powder in veggie stock. Then, add in white petite potatoes and puree in batches until smooth. Garnished with toasted almond slivers and fresh flat leaf parsley from our garden.
