Polynesian Pulled Chicken Sandwiches
Even in colder months we love to visit recipes that take us to the islands! This dish is filled with boneless, skinless chicken breasts, crushed pineapple, BBQ sauce, yellow onion, bell peppers, sweetened shredded coconut, a touch of soy sauce, cornstarch, and minced garlic. Your slow cooker does all the work, and you come home with a meal ready to shred and devour on hoagie buns, over a baked sweet potato, or however you like!
Pairs especially well with this week’s Polynesian Slaw (I love to put the slaw on my sammie) and Sticky Sweet Fried Plantains for a sweet treat under our “Sides” menu!
