I'm not really superstitious, but for some reason I always eat black-eyed peas during the first week of the New Year... this is a very tasty version of the classic Low Country dish. It includes ham, carrots, onion, celery, black-eyed peas, collard greens with fresh thyme, a touch of red pepper flakes, and bay leaves with chicken broth. Comes with jasmine rice and two squares of cornbread. (Cornbread is not GF).
