Soba noodles (buckwheat) have a fantastic texture and absorb flavors so well! With this dish, we toss in thinly sliced red cabbage, julienne carrots, scallions, and sesame seeds with a homemade ginger-soy dressing. We then garnish with Nori (dried seaweed.)
